Visions of guacamole, salsa and tacos are dancing through our heads. If you’re planning to celebrate today with some Mexican fare, awesome. But know you aren’t destined to OD on queso and margaritas (and wind up full of regret come seis de Mayo!). Especially if you stick to fresher, lighter options like these spicy shrimp tacos. Start with grilled shrimp—it’s naturally low in calories and fat yet high in protein—and serve it up on whole-grain corn tortillas. The best part’s the secret sauce: a tangy mango one made from creamy nonfat Greek yogurt (instead of sour cream), juicy mangos, and cilantro. Load your table with healthy toppings, like pico, avocado, salsa, tomatoes, jalepenos, peppers and onions, and your meal will be the best on the block (piñata not included).

Spicy Shrimp Tacos With Tangy Mango Sauce

INGREDIENTS

  • 1/2 cup nonfat plain Greek yogurt
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno pepper, seeded and diced
  • 1/4 cup chopped red onion
  • 3/4 cup fresh mango, chopped
  • 2 tablespoons fresh lime juice
  • 1 teaspoon cumin
  • 2 teaspoons blackened seasoning
  • 2 teaspoons Old Bay seasoning
  • 2 teaspoons brown sugar
  • 1 ½ pounds large shrimp, peeled and deveined
  • 1 tablespoon canola oil
  • 8 (6-inch) corn tortillas
  • 1 avocado, mashed
  • 1 cup shredded cabbage
  • 1 lime, sliced into wedges

DIRECTIONS

Put first 7 ingredients into a food processor. Process until well combined and almost smooth. Set aside. Next, combine blackened seasoning, Old Bay seasoning, and brown sugar in a small bowl and stir to mix. Toss the shrimp in the oil and then rub seasoning mixture evenly on shrimp. Then heat a grill pan over high heat. Grill shrimp for 2-3 minutes on each side until pink and cooked through.

Lastly, heat tortillas according to package directions. Use 1 tortilla for each taco and top evenly with grilled shrimp, mango sauce, cabbage, and avocado. Garnish with additional toppings, if desired. Serve lime wedges on the side. Makes 4 servings (each serving is 2 tacos).
